- 1 (14.75 oz) can wild-caught salmon, drained
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1/4 cup extra virgin olive oil (for frying)
Instructions
- In a large bowl, flake the drained salmon with a fork until evenly broken up.
- Add panko breadcrumbs, beaten eggs, parsley, lemon juice, salt, and pepper. Mix until well combined.
- Form the mixture into small patties (about 3 inches wide and ¾ inch thick).
- In a skillet over medium heat, add olive oil until shimmering.
- Fry the patties in batches for about 4-5 minutes on each side or until golden brown and crispy.
- Drain on paper towels and serve warm with your favorite sauce.
