  • 1 lb Italian sausage, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 14 oz crushed tomatoes (canned)
  • 2 tsp Italian seasoning
  • ¼ cup Parmesan cheese, grated

Instructions

  1. Prepare your ingredients: Chop bell peppers, slice onions, and mince garlic.
  2. Cook the sausage: Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned (5-7 minutes).
  3. Sauté vegetables: Add onions and bell peppers to the skillet. Cook until softened (about 5 minutes).
  4. Add garlic & tomatoes: Stir in minced garlic for about 30 seconds before adding crushed tomatoes and Italian seasoning. Simmer for 10 minutes.
  5. Combine pasta & sauce: Cook penne according to package instructions. Drain and mix with the skillet ingredients.
  6. Serve: Plate the pasta and top with freshly grated Parmesan cheese.
