Ingredients

  • 56 scallions, finely chopped
  • 1/2 tsp salt
  • 2 tbsp vegetable or sesame oil (for frying)

Instructions

  1. In a mixing bowl, combine flour and salt. Gradually add boiling water while stirring until a shaggy dough forms.
  2. Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let rest for at least 30 minutes.
  3. Divide the dough into four pieces and roll each into an 8-inch circle. Sprinkle with scallions and drizzle lightly with oil.
  4. Roll each circle tightly into a log and coil into a spiral shape.
  5. Heat oil in a skillet over medium heat and fry each pancake for 3-4 minutes on each side until golden brown.
