- 2 cups all-purpose flour
- 3/4 cup boiling water
- 5–6 scallions, finely chopped
- 1/2 tsp salt
- 2 tbsp vegetable or sesame oil (for frying)
Instructions
- In a mixing bowl, combine flour and salt. Gradually add boiling water while stirring until a shaggy dough forms.
- Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let rest for at least 30 minutes.
- Divide the dough into four pieces and roll each into an 8-inch circle. Sprinkle with scallions and drizzle lightly with oil.
- Roll each circle tightly into a log and coil into a spiral shape.
- Heat oil in a skillet over medium heat and fry each pancake for 3-4 minutes on each side until golden brown.
