- 1 lb fresh sea scallops
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- Juice of 1 lemon
- 2 cloves garlic, minced
- 2 tbsp chopped parsley (for garnish)
Instructions
- Pat the scallops dry with paper towels and season both sides with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Place scallops in the pan without crowding them; cook for 2-3 minutes until golden brown on one side.
- Flip the scallops, add butter and garlic to the pan, and baste for another 2-3 minutes until opaque in the center.
- Remove from heat and drizzle with fresh lemon juice; garnish with chopped parsley before serving.
