- 1 pound large shrimp, peeled and deveined
- 1 ripe avocado, diced
- 1 ripe mango, diced
- ¼ cup fresh cilantro, chopped
- 2 tablespoons lime juice (freshly squeezed)
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse shrimp under cold water and pat dry.
- Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper; cook until pink and opaque (about 3-4 minutes).
- While shrimp cooks, dice avocado and mango, and chop cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
- Assemble bowls: layer cooked shrimp, avocado, and mango; drizzle with dressing.
- Garnish with cilantro before serving.
