- 1 lb shrimp (peeled and deveined)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 yellow onion (sliced)
- 4 flour tortillas
- 2 tbsp extra virgin olive oil
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 lime (juiced)
- Salt to taste
Instructions
- Prepare shrimp by peeling and deveining. Slice bell peppers and onion into thin strips.
- In a bowl, combine shrimp, olive oil, cumin, chili powder, garlic powder, lime juice, and salt; marinate for at least 10 minutes.
- Heat a skillet over medium-high heat; add a splash of olive oil. Sauté bell peppers and onions until soft but still crisp (about 5 minutes).
- Push veggies aside in the skillet and add marinated shrimp. Cook until shrimp turn pink and opaque (about 3-4 minutes).
- Warm tortillas in another pan or microwave until pliable.
- Serve by filling each tortilla with the shrimp and veggie mixture, adding extra lime juice if desired.
