  • 1 lb shrimp (peeled and deveined)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow onion (sliced)
  • 4 flour tortillas
  • 2 tbsp extra virgin olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 lime (juiced)
  • Salt to taste

Instructions

  1. Prepare shrimp by peeling and deveining. Slice bell peppers and onion into thin strips.
  2. In a bowl, combine shrimp, olive oil, cumin, chili powder, garlic powder, lime juice, and salt; marinate for at least 10 minutes.
  3. Heat a skillet over medium-high heat; add a splash of olive oil. Sauté bell peppers and onions until soft but still crisp (about 5 minutes).
  4. Push veggies aside in the skillet and add marinated shrimp. Cook until shrimp turn pink and opaque (about 3-4 minutes).
  5. Warm tortillas in another pan or microwave until pliable.
  6. Serve by filling each tortilla with the shrimp and veggie mixture, adding extra lime juice if desired.
