- 7 oz (200g) dark chocolate (70% cocoa content)
- 1 cup (240ml) heavy cream
- 1/4 cup (50g) granulated sugar
- 4 large eggs (organic preferred)
- 1 tsp pure vanilla extract
Instructions
- Prepare your ingredients: Chop the dark chocolate into small pieces.
- Melt the chocolate: Place the chopped chocolate in a heatproof bowl over simmering water, stirring until smooth.
- Whip the cream: In a separate bowl, whisk the heavy cream until soft peaks form.
- Combine egg mixture: Whisk together sugar and egg yolks in another bowl until pale. Gradually mix in melted chocolate.
- Fold it all together: Gently fold whipped cream into the chocolate mixture until no streaks remain.
- Chill & serve: Spoon into serving dishes and refrigerate for at least two hours before serving.
