- 2 pounds Yukon Gold potatoes
 - 4 tablespoons olive oil
 - 4 tablespoons unsalted butter
 - 2 tablespoons fresh rosemary or thyme
 - Salt and pepper to taste
 
Instructions
- Scrub and quarter the Yukon Gold potatoes.
 - Boil the potatoes in salted water until fork-tender (about 15-20 minutes). Drain well.
 - Preheat oven to 450°F (230°C).
 - Place potatoes on a parchment-lined baking sheet and gently smash them to about ½ inch thick.
 - Drizzle olive oil over each potato, add pats of butter, sprinkle with fresh herbs, salt, and pepper.
 - Bake for 20-25 minutes until golden brown and crispy.
