- 4 cups all-purpose flour
- 1 ½ cups filtered water
- 1 cup active sourdough starter
- 2 tsp sea salt
Instructions
- Prepare your starter by feeding it 4-6 hours before baking.
- In a large bowl, mix flour and water until no dry spots remain. Let it rest for 30 minutes (autolyse).
- Add salt and your bubbly starter; mix well until combined.
- Cover the bowl with a damp cloth and let it ferment at room temperature for 4-5 hours, performing stretch and folds every 30 minutes in the first two hours.
- After bulk fermentation, shape the dough into a round loaf on a floured surface.
- Place in a proofing basket, cover, and let rise for about an hour until doubled in size.
- Preheat oven to 450°F (232°C) with a Dutch oven inside for 30 minutes. Bake the loaf covered for 30 minutes, then uncovered for an additional 15-20 minutes until golden brown.
- Enjoy your fresh sourdough cooled on a wire rack!
