- 1 cup panko breadcrumbs
- 3 cups fresh spinach
- 1 cup Alfredo sauce (store-bought or homemade)
- ¼ cup grated Parmesan cheese
- 2 tbsp olive oil (for sautéing)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, ricotta cheese, eggs, garlic powder, Italian seasoning, salt, pepper, and panko breadcrumbs. Mix gently until just combined.
- Roll the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
- Bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
- While baking, heat olive oil in a skillet over medium heat. Add spinach and sauté until wilted (about 3-4 minutes).
- Stir in the Alfredo sauce and bring to a gentle simmer before adding the baked meatballs.
