  • Total Time: 35 minutes
  • Yield: Serves 2

Ingredients

Scale
  • 2 servings ramen noodles (fresh or instant)
  • 8 oz grilled beef (ribeye or sirloin, marinated)
  • 2 tbsp Korean chili paste (gochujang)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 cup vegetables (bok choy or spinach)
  • 1 tsp sesame oil
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic (minced)
  • 1-inch ginger (minced)
  • 2 green onions (sliced)

Instructions

  1. 1. Marinate the beef: In a bowl, mix soy sauce, garlic, ginger, sesame oil, and gochujang. Add sliced beef and let it marinate while preparing other ingredients.
  2. 2. Cook the ramen: Boil water in a pot and cook ramen noodles according to package instructions until al dente. Drain and drizzle with sesame oil.
  3. 3. Sear the beef: Heat a skillet over medium-high heat. Add marinated beef slices in batches, cooking until browned (about 3-4 minutes per side).
  4. 4. Make the creamy sauce: In the same skillet, lower heat and stir in heavy cream with remaining gochujang until heated through.
  5. 5. Combine: Add cooked noodles to the skillet with the creamy sauce and toss gently. Incorporate vegetables until just wilted.
  6. 6. Serve: Ladle ramen into bowls, topping with grilled beef slices and chopped green onions.
