Ingredients
Scale
- 2 servings ramen noodles (fresh or instant)
- 8 oz grilled beef (ribeye or sirloin, marinated)
- 2 tbsp Korean chili paste (gochujang)
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1 cup vegetables (bok choy or spinach)
- 1 tsp sesame oil
- 2 tbsp low-sodium soy sauce
- 2 cloves garlic (minced)
- 1-inch ginger (minced)
- 2 green onions (sliced)
Instructions
- 1. Marinate the beef: In a bowl, mix soy sauce, garlic, ginger, sesame oil, and gochujang. Add sliced beef and let it marinate while preparing other ingredients.
- 2. Cook the ramen: Boil water in a pot and cook ramen noodles according to package instructions until al dente. Drain and drizzle with sesame oil.
- 3. Sear the beef: Heat a skillet over medium-high heat. Add marinated beef slices in batches, cooking until browned (about 3-4 minutes per side).
- 4. Make the creamy sauce: In the same skillet, lower heat and stir in heavy cream with remaining gochujang until heated through.
- 5. Combine: Add cooked noodles to the skillet with the creamy sauce and toss gently. Incorporate vegetables until just wilted.
- 6. Serve: Ladle ramen into bowls, topping with grilled beef slices and chopped green onions.
