- 1 lb baby potatoes
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust for heat)
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse and halve the baby potatoes, leaving the skin on for added texture.
- In a large bowl, mix olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Toss the halved potatoes in the mixture until evenly coated.
- Spread the seasoned potatoes cut-side down on a parchment-lined baking sheet.
- Roast in the preheated oven for 25-30 minutes or until golden and crispy. Halfway through, shake or flip them for even cooking.
- Once done, garnish with freshly chopped parsley and serve immediately.
