- 2 cups fresh spinach (washed and dried)
- 1/2 cup crumbled feta cheese
- 3 large eggs
- 1 tsp olive oil or butter
- Salt and pepper to taste
Instructions
- Sauté the spinach in olive oil or butter over medium heat until wilted (about 1-2 minutes).
- Whisk the eggs in a bowl until light and frothy.
- Pour the whisked eggs over the sautéed spinach in the skillet.
- Add crumbled feta to one half of the omelette when edges begin to lift (after about 2-3 minutes).
- Fold the omelette in half once mostly cooked through, allowing it to set for an additional minute.
- Serve hot, optionally garnished with fresh herbs.
