- 4 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 medium red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash the spinach thoroughly and dry using paper towels or a salad spinner.
- Slice cherry tomatoes in half and dice the cucumber into bite-sized pieces. Thinly slice the red onion.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- In a large bowl, combine spinach, tomatoes, cucumber, red onion, and feta cheese. Drizzle with dressing and toss gently to coat.
