  • 2 cups fresh spinach (packed)
  • 3 cloves garlic (minced)
  • 4 oz cream cheese (softened)
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté minced garlic until fragrant, then add fresh spinach and cook until wilted (about 2-3 minutes). Remove from heat.
  3. In a bowl, combine sautéed spinach, cream cheese, grated Parmesan, salt, and pepper until well mixed.
  4. Carefully slice pockets into each chicken breast without cutting all the way through. Stuff each pocket generously with the spinach mixture.
  5. Place stuffed chicken breasts in a baking dish, drizzle with remaining olive oil, and season with salt and pepper. Bake for 25-30 minutes or until golden brown and cooked through.
