- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach (packed)
- 3 cloves garlic (minced)
- 4 oz cream cheese (softened)
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil (divided)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté minced garlic until fragrant, then add fresh spinach and cook until wilted (about 2-3 minutes). Remove from heat.
- In a bowl, combine sautéed spinach, cream cheese, grated Parmesan, salt, and pepper until well mixed.
- Carefully slice pockets into each chicken breast without cutting all the way through. Stuff each pocket generously with the spinach mixture.
- Place stuffed chicken breasts in a baking dish, drizzle with remaining olive oil, and season with salt and pepper. Bake for 25-30 minutes or until golden brown and cooked through.
