  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  2. Bake crust for 10 minutes until golden brown. Let cool.
  3. In a bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
  4. Beat in eggs one at a time, mixing gently to maintain airiness.
  5. Pour filling over cooled crust. Bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Cool in the oven with the door cracked for an hour, then refrigerate for at least four hours or overnight.
  7. Top with fresh strawberries before serving.
