- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- 1 cup sour cream
- ¾ cup granulated sugar
- 2 tsp pure vanilla extract
- 2 cups fresh strawberries, sliced
- 1 cup whipped cream (homemade or store-bought)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers and melted butter until evenly coated. Press firmly into the bottom of a springform pan to form an even layer.
- In another bowl, beat the cream cheese and sour cream until smooth. Gradually add sugar and mix well.
- Stir in vanilla extract until fully incorporated. Pour the mixture over the crust in the springform pan.
- Bake for about 40 minutes or until set but still slightly jiggly in the center. Turn off the oven and let it cool inside for an hour with the door ajar.
- Refrigerate for at least four hours (preferably overnight). Top with sliced strawberries and serve with whipped cream.
