- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1 cup fresh strawberries (chopped)
- 1/2 cup heavy cream (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream the softened butter until fluffy; gradually mix in sugar.
- Add the egg to the butter mixture and blend until smooth.
- Gradually add dry ingredients to wet ingredients; mix gently until just combined.
- Fold in chopped strawberries without mashing them.
- Drop heaping tablespoons onto prepared baking sheets, leaving space between each cookie.
- Bake for 12-15 minutes until edges are golden; cool on wire racks.
- Whip heavy cream until soft peaks form and serve on top of cookies.
