- 4 oz cream cheese, softened
- 1 cup fresh berries (strawberries or blueberries)
- 2 large eggs
- 1 cup whole milk (or almond milk)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 2 tbsp maple syrup
- 2 tbsp butter (for cooking)
Instructions
- Prepare Filling: In a bowl, mix softened cream cheese with fresh berries until combined. Set aside.
- Make Custard: Whisk together eggs, milk, vanilla extract, and cinnamon in another bowl.
- Assemble Toasts: Spread the berry-cream cheese mixture between two slices of bread to create a sandwich. Repeat for remaining slices.
- Soak Toasts: Dip each sandwich into the egg mixture, soaking briefly on each side.
- Cook: Heat butter in a skillet over medium heat and cook soaked sandwiches for 3-4 minutes on each side until golden brown.
- Serve: Plate the stuffed French toast warm and drizzle with maple syrup.
