- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 medium onion, chopped
- 2–3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheese (mozzarella or cheddar)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
- In a skillet over medium heat, sauté the chopped onion until golden brown. Add minced garlic and cook for an additional minute.
- Stir in ground meat until browned, then mix in cooked rice and half of the tomato sauce. Season to taste.
- Spoon the mixture into each pepper generously, topping with remaining tomato sauce and shredded cheese.
- Cover with foil and bake for 30 minutes; remove foil during the last 10 minutes to achieve a golden crust.
