  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked brown rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, finely chopped
  • 1 cup shredded mozzarella cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, sauté onions until translucent. Add ground meat and cook until browned.
  4. Stir in diced tomatoes, cooked rice, cumin, paprika, salt, and pepper; cook for an additional 3-5 minutes.
  5. Stuff each pepper with the filling, top with cheese, and place upright in a baking dish with water at the bottom.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10 minutes until golden.
  7. Garnish with fresh herbs if desired; serve hot.
