Ingredients
- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 cup cooked brown rice
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, finely chopped
- 1 cup shredded mozzarella cheese
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, sauté onions until translucent. Add ground meat and cook until browned.
- Stir in diced tomatoes, cooked rice, cumin, paprika, salt, and pepper; cook for an additional 3-5 minutes.
- Stuff each pepper with the filling, top with cheese, and place upright in a baking dish with water at the bottom.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10 minutes until golden.
- Garnish with fresh herbs if desired; serve hot.
