  • 4 bell peppers (any color)
  • 1 lb ground turkey or beef
  • 1 cup cooked rice (brown or white)
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, finely chopped
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet over medium heat, sauté chopped onion until translucent. Add ground meat and cook until browned.
  4. Stir in cooked rice, diced tomatoes, cumin, paprika, and garlic powder. Mix well.
  5. Generously fill each pepper with the mixture and top with cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
