- 4 bell peppers (any color)
- 1 lb ground turkey or beef
- 1 cup cooked rice (brown or white)
- 1 can (15 oz) diced tomatoes
- 1 medium onion, finely chopped
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp garlic powder
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet over medium heat, sauté chopped onion until translucent. Add ground meat and cook until browned.
- Stir in cooked rice, diced tomatoes, cumin, paprika, and garlic powder. Mix well.
- Generously fill each pepper with the mixture and top with cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
