  • 4 large bell peppers (red, yellow, or green)
  • 1 cup halal cheese (mozzarella or feta)
  • 1 lb ground beef or chicken
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice tops off bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent; add minced garlic and cook for another minute.
  4. Add ground meat to the skillet and cook until browned. Mix in cooked rice, tomato sauce, cumin, paprika, salt, and pepper; combine thoroughly.
  5. Generously stuff each bell pepper with the mixture, topping with shredded halal cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil for the last 10 minutes to allow cheese to melt and brown.
