- 4 large bell peppers (red, yellow, or green)
- 1 cup halal cheese (mozzarella or feta)
- 1 lb ground beef or chicken
- 1 cup cooked rice (white or brown)
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 cup tomato sauce
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Slice tops off bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent; add minced garlic and cook for another minute.
- Add ground meat to the skillet and cook until browned. Mix in cooked rice, tomato sauce, cumin, paprika, salt, and pepper; combine thoroughly.
- Generously stuff each bell pepper with the mixture, topping with shredded halal cheese.
- Cover with foil and bake for 25 minutes. Remove foil for the last 10 minutes to allow cheese to melt and brown.
