- 4 medium zucchinis
- 1 lb lean ground beef or turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- Salt & pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Halve each zucchini lengthwise and scoop out seeds, leaving about a 1/4-inch thickness.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic for about 30 seconds.
- Add ground meat to the skillet; cook until browned. Stir in tomato sauce, Italian seasoning, salt, and pepper; simmer for 5 minutes.
- Fill each zucchini half with the meat mixture. Top with shredded mozzarella cheese.
- Place on a baking sheet and bake for 25-30 minutes until zucchinis are tender and cheese is bubbly.
