  • 4 medium zucchinis
  • 1 lb lean ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve each zucchini lengthwise and scoop out seeds, leaving about a 1/4-inch thickness.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic for about 30 seconds.
  4. Add ground meat to the skillet; cook until browned. Stir in tomato sauce, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  5. Fill each zucchini half with the meat mixture. Top with shredded mozzarella cheese.
  6. Place on a baking sheet and bake for 25-30 minutes until zucchinis are tender and cheese is bubbly.
