- 4 medium zucchinis
- 1 lb lean ground turkey or beef
- 1 medium yellow onion, diced
- 3 cloves fresh garlic, minced
- 1 cup bell peppers, diced (any color)
- 1 cup mozzarella cheese, shredded
- 1 tsp Italian seasoning
- 1 cup tomato sauce
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the seeds.
- In a skillet over medium heat, add olive oil. Sauté onions and garlic until translucent (about 3-4 minutes).
- Add ground meat and bell peppers; cook until browned.
- Stir in tomato sauce and Italian seasoning; simmer for 5 minutes.
- Stuff each zucchini half with the mixture, pressing down gently.
- Top with shredded cheese and bake for 25-30 minutes until zucchinis are tender.
