  • 1 lb lean ground turkey or beef
  • 1 medium yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 cup mozzarella cheese, shredded
  • 1 tsp Italian seasoning
  • 1 cup tomato sauce
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the seeds.
  2. In a skillet over medium heat, add olive oil. Sauté onions and garlic until translucent (about 3-4 minutes).
  3. Add ground meat and bell peppers; cook until browned.
  4. Stir in tomato sauce and Italian seasoning; simmer for 5 minutes.
  5. Stuff each zucchini half with the mixture, pressing down gently.
  6. Top with shredded cheese and bake for 25-30 minutes until zucchinis are tender.
