- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 2 ripe peaches, chopped
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press firmly into the bottom of a springform pan.
- In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, sour cream, and vanilla extract until combined.
- Add eggs one at a time on low speed; do not overmix to prevent cracks.
- Gently fold in chopped peaches and mixed berries into the batter.
- Pour filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center. Let cool at room temperature before chilling in the fridge for at least 4 hours.
- Once chilled, remove from springform pan and garnish with fresh fruit before slicing.
