  • 3 medium sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 15 oz whole-milk ricotta cheese
  • 2 large eggs
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce (homemade or store-bought)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a bowl, mix ricotta cheese with eggs, basil, oregano, salt, and pepper until smooth.
  4. Spread tomato sauce on the bottom of a baking dish. Layer with sweet potato slices, ricotta mixture, and spinach. Repeat layers until ingredients are used up.
  5. Top with remaining tomato sauce and sprinkle mozzarella cheese generously.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
  7. Allow to cool slightly before serving.
