- 3 medium sweet potatoes, peeled and sliced into 1/4-inch rounds
- 15 oz whole-milk ricotta cheese
- 2 large eggs
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce (homemade or store-bought)
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Peel and slice the sweet potatoes into thin rounds.
- In a bowl, mix ricotta cheese with eggs, basil, oregano, salt, and pepper until smooth.
- Spread tomato sauce on the bottom of a baking dish. Layer with sweet potato slices, ricotta mixture, and spinach. Repeat layers until ingredients are used up.
- Top with remaining tomato sauce and sprinkle mozzarella cheese generously.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
