- 2 medium sweet potatoes (about 1 cup mashed)
- 1 cup all-purpose flour (or whole wheat)
- ½ cup granulated sugar (or brown sugar)
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 2 large eggs
- ½ cup milk (or plant-based alternative)
- ⅓ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease muffin tins.
- Peel and dice sweet potatoes; steam or boil until tender (about 15 minutes). Mash until smooth.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg.
- In another bowl, beat eggs; add mashed sweet potatoes, milk, oil/butter, and vanilla extract. Mix until smooth.
- Combine wet ingredients with dry ingredients gently until just mixed.
- Spoon batter into muffin tins about two-thirds full.
- Bake for 20-25 minutes or until golden brown and toothpick comes out clean. Cool slightly before serving.
