  • 2 medium sweet potatoes (about 1 cup mashed)

  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 2 large eggs
  • ½ cup milk (or plant-based alternative)
  • ⅓ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease muffin tins.
  2. Peel and dice sweet potatoes; steam or boil until tender (about 15 minutes). Mash until smooth.
  3. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg.
  4. In another bowl, beat eggs; add mashed sweet potatoes, milk, oil/butter, and vanilla extract. Mix until smooth.
  5. Combine wet ingredients with dry ingredients gently until just mixed.
  6. Spoon batter into muffin tins about two-thirds full.
  7. Bake for 20-25 minutes or until golden brown and toothpick comes out clean. Cool slightly before serving.
