Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into uniform cubes (about 1-inch pieces).
- In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, ground cinnamon, and nutmeg if using.
- Line a baking sheet with parchment paper and spread the seasoned sweet potatoes in an even layer.
