- 1 lb lean ground beef
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, rinsed
- 1 medium onion, chopped
- 1 bell pepper (red or yellow), chopped
- 1 cup cheddar cheese, grated
- 1 cup finely ground cornmeal
- 2 tsp baking powder
- 1 cup whole milk (or buttermilk)
- 2 large eggs
- 2 tsp chili powder
- 1 tsp cumin
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, drizzle olive oil and sauté chopped onions and bell peppers until softened (about 5 minutes).
- Add ground beef to the skillet and cook until browned. Stir in chili powder and cumin.
- Incorporate rinsed black beans and diced tomatoes into the skillet, letting them simmer for about 10 minutes.
- In a separate bowl, mix cornmeal, baking powder, milk, eggs, salt, and half of the cheese until just combined.
- Spread the beef mixture in a greased baking dish; pour cornbread batter over top and sprinkle remaining cheese.
- Bake for 25-30 minutes or until golden brown on top.
