  • 1 lb lean ground beef
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed
  • 1 medium onion, chopped
  • 1 bell pepper (red or yellow), chopped
  • 1 cup cheddar cheese, grated
  • 1 cup finely ground cornmeal
  • 2 tsp baking powder
  • 1 cup whole milk (or buttermilk)
  • 2 large eggs
  • 2 tsp chili powder
  • 1 tsp cumin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, drizzle olive oil and sauté chopped onions and bell peppers until softened (about 5 minutes).
  3. Add ground beef to the skillet and cook until browned. Stir in chili powder and cumin.
  4. Incorporate rinsed black beans and diced tomatoes into the skillet, letting them simmer for about 10 minutes.
  5. In a separate bowl, mix cornmeal, baking powder, milk, eggs, salt, and half of the cheese until just combined.
  6. Spread the beef mixture in a greased baking dish; pour cornbread batter over top and sprinkle remaining cheese.
  7. Bake for 25-30 minutes or until golden brown on top.
