- 1 lb lean ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 cup canned corn, drained
- 2 tbsp taco seasoning
- 1 cup shredded cheddar cheese (divided)
- 1 cup cornmeal
- 1 cup milk (whole or almond)
- 2 tsp baking powder
- 1 large egg
- Optional: salsa for serving
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, sauté onions and bell peppers until softened (about 5 minutes). Add ground beef and cook until browned.
- Mix in drained corn and taco seasoning; simmer for an additional 5 minutes.
- In a bowl, combine cornmeal, baking powder, milk, egg, salt, pepper, and half the cheese. Mix until just blended.
- Spread beef mixture in the baking dish; pour cornbread batter on top without stirring. Sprinkle remaining cheese.
- Bake for 25-30 minutes or until golden brown. Let cool for 10 minutes before serving.
