  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 cup canned corn, drained
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup cornmeal
  • 1 cup milk (whole or almond)
  • 2 tsp baking powder
  • 1 large egg
  • Optional: salsa for serving

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, sauté onions and bell peppers until softened (about 5 minutes). Add ground beef and cook until browned.
  3. Mix in drained corn and taco seasoning; simmer for an additional 5 minutes.
  4. In a bowl, combine cornmeal, baking powder, milk, egg, salt, pepper, and half the cheese. Mix until just blended.
  5. Spread beef mixture in the baking dish; pour cornbread batter on top without stirring. Sprinkle remaining cheese.
  6. Bake for 25-30 minutes or until golden brown. Let cool for 10 minutes before serving.
