- 1 lb boneless chicken thighs
- 2 tbsp tandoori masala
- 4 cloves fresh garlic, minced
- 1 cup plain yogurt (full-fat)
- 1 loaf ciabatta or baguette
- ¼ cup butter, softened
- ¼ cup cilantro leaves, chopped
- 1 tbsp lemon juice
Instructions
- Marinate the chicken: In a bowl, mix yogurt, tandoori masala, minced garlic, and lemon juice. Add chicken and coat well. Marinate for at least 1 hour or overnight.
- Preheat your oven to 400°F (200°C).
- Bake the chicken: Place marinated chicken on a parchment-lined baking sheet. Bake for 25-30 minutes until cooked through and slightly charred.
- Prepare the garlic spread: Mix softened butter with minced garlic and chopped cilantro.
- Assemble: Slice the bread horizontally and spread the garlic mixture on each half. Top with baked chicken pieces.
- Final bake: Return to the oven for an additional 10-15 minutes until golden brown. Slice and serve hot!
