Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and spread the tater tots in a single layer.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- While the tater tots bake, whisk together eggs in a bowl until frothy.
- In a skillet over medium heat, melt olive oil or butter. Sauté diced bell peppers for 3-5 minutes until softened.
- Pour the whisked eggs into the skillet with the veggies. Cook gently until just set, seasoning with salt and pepper.
- Assemble your bowl: start with crispy tater tots, top with scrambled eggs, sprinkle cheese, and garnish with green onions.
