  • 24 ladyfingers (savoiardi)
  • 1 cup strong brewed espresso (cooled)
  • 1 cup mascarpone cheese
  • ½ cup granulated sugar
  • 2 large egg yolks
  • 2 tbsp cocoa powder
  • 2 tbsp rum or coffee liqueur

Instructions

  1. Gather all ingredients and equipment at room temperature.
  2. Brew the espresso and let it cool slightly.
  3. In a bowl, whisk together mascarpone cheese and granulated sugar until smooth.
  4. Add egg yolks one at a time, whisking continuously until fully combined.
  5. Quickly dip each ladyfinger into the cooled espresso, ensuring they soak but do not become soggy.
  6. In a serving dish, layer half of the soaked ladyfingers on the bottom, followed by half of the mascarpone mixture. Repeat with remaining ingredients.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  8. Before serving, dust generously with cocoa powder.
