- 24 ladyfingers (savoiardi)
- 1 cup strong brewed espresso (cooled)
- 1 cup mascarpone cheese
- ½ cup granulated sugar
- 2 large egg yolks
- 2 tbsp cocoa powder
- 2 tbsp rum or coffee liqueur
Instructions
- Gather all ingredients and equipment at room temperature.
- Brew the espresso and let it cool slightly.
- In a bowl, whisk together mascarpone cheese and granulated sugar until smooth.
- Add egg yolks one at a time, whisking continuously until fully combined.
- Quickly dip each ladyfinger into the cooled espresso, ensuring they soak but do not become soggy.
- In a serving dish, layer half of the soaked ladyfingers on the bottom, followed by half of the mascarpone mixture. Repeat with remaining ingredients.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, dust generously with cocoa powder.
