- 8 oz short pasta (penne or fusilli)
- 1 can (5 oz) quality tuna packed in olive oil, drained
- 1 cup shredded sharp cheddar cheese
- 1 cup whole milk
- ½ cup panko breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas (no need to thaw)
- 1 tsp Dijon mustard
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
- Cook pasta according to package instructions until al dente; drain and set aside.
- In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and cook until fragrant.
- In a large bowl, combine cooked pasta, drained tuna, sautéed onions and garlic, frozen peas, milk, Dijon mustard, half of the cheese, salt, and pepper. Mix well.
- Pour the mixture into the greased baking dish. Sprinkle the remaining cheese and panko breadcrumbs on top.
- Bake for 25-30 minutes until bubbly and golden brown. Let it cool slightly before serving.
