  • 8 oz short pasta (penne or fusilli)
  • 1 can (5 oz) quality tuna packed in olive oil, drained
  • 1 cup shredded sharp cheddar cheese
  • 1 cup whole milk
  • ½ cup panko breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas (no need to thaw)
  • 1 tsp Dijon mustard
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and cook until fragrant.
  4. In a large bowl, combine cooked pasta, drained tuna, sautéed onions and garlic, frozen peas, milk, Dijon mustard, half of the cheese, salt, and pepper. Mix well.
  5. Pour the mixture into the greased baking dish. Sprinkle the remaining cheese and panko breadcrumbs on top.
  6. Bake for 25-30 minutes until bubbly and golden brown. Let it cool slightly before serving.
