  • 2 large sweet potatoes
  • 2 tablespoons unsalted butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the sweet potatoes and poke holes in them.
  2. Bake directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
  3. Let cool slightly, then slice each potato in half lengthwise and scoop out most of the flesh into a mixing bowl.
  4. Mix the scooped flesh with butter, cheese, sour cream, salt, pepper, and half the green onions until smooth.
  5. Spoon the mixture back into the potato skins, top with extra cheese if desired, and bake for an additional 15-20 minutes until heated through.
