Ingredients
- 2 large sweet potatoes
- 2 tablespoons unsalted butter
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (or Greek yogurt)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C). Wash the sweet potatoes and poke holes in them.
- Bake directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
- Let cool slightly, then slice each potato in half lengthwise and scoop out most of the flesh into a mixing bowl.
- Mix the scooped flesh with butter, cheese, sour cream, salt, pepper, and half the green onions until smooth.
- Spoon the mixture back into the potato skins, top with extra cheese if desired, and bake for an additional 15-20 minutes until heated through.
