Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, mix melted butter and brown sugar until smooth; pour into the pan.
- Arrange pineapple chunks evenly over the brown sugar mixture.
- In another bowl, whisk flour, granulated sugar, baking powder, and salt.
- In a separate bowl, beat eggs until frothy; mix in vanilla and melted butter.
- Gradually add dry ingredients to wet ingredients; stir gently until just combined.
- Pour batter over pineapples and bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
- Allow cooling slightly before inverting onto a serving plate.
