- 3 cups mixed vegetables (carrots, broccoli, bell peppers)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup seasoned breadcrumbs
- 1 tsp garlic powder
- 2 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and chop the mixed vegetables into bite-sized pieces.
- In a large bowl, mix the chopped vegetables with the cream of mushroom soup until well-coated.
- Sprinkle garlic powder over the mixture and fold in half of the shredded cheddar and mozzarella cheeses.
- Pour the veggie mixture into a baking dish, spreading it evenly.
- Top with remaining cheese and sprinkle breadcrumbs over the top. Drizzle lightly with olive oil.
- Bake for 30-35 minutes or until bubbly and golden brown.
