  • 3 cups mixed vegetables (carrots, broccoli, bell peppers)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup seasoned breadcrumbs
  • 1 tsp garlic powder
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and chop the mixed vegetables into bite-sized pieces.
  3. In a large bowl, mix the chopped vegetables with the cream of mushroom soup until well-coated.
  4. Sprinkle garlic powder over the mixture and fold in half of the shredded cheddar and mozzarella cheeses.
  5. Pour the veggie mixture into a baking dish, spreading it evenly.
  6. Top with remaining cheese and sprinkle breadcrumbs over the top. Drizzle lightly with olive oil.
  7. Bake for 30-35 minutes or until bubbly and golden brown.
