  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 whole wheat buns

Instructions

  1. In a large bowl, mash the rinsed black beans with a fork until creamy but still chunky.
  2. Cook quinoa according to package instructions; typically combine 1 cup quinoa with 2 cups water over medium heat until tender.
  3. Heat olive oil in a skillet over medium heat. Sauté chopped onion and bell peppers until softened.
  4. Add minced garlic, cumin, smoked paprika, salt, and pepper to the vegetable mixture; cook for an additional minute.
  5. Combine the mashed beans, cooked quinoa, and sautéed veggies in the large bowl; mix well.
  6. Form the mixture into four patties about ½ inch thick.
  7. Grill or pan-fry the patties for about 5 minutes on each side until crispy.
  8. Toast whole wheat buns and assemble your burger with desired toppings.
