- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cooked quinoa
- 1 cup bell peppers, finely chopped
- 1 medium sweet onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 whole wheat buns
- Optional toppings: lettuce, tomato slices, avocado, condiments
Instructions
- In a large bowl, mash the rinsed black beans with a fork until creamy but still chunky.
- Cook quinoa according to package instructions; typically combine 1 cup quinoa with 2 cups water over medium heat until tender.
- Heat olive oil in a skillet over medium heat. Sauté chopped onion and bell peppers until softened.
- Add minced garlic, cumin, smoked paprika, salt, and pepper to the vegetable mixture; cook for an additional minute.
- Combine the mashed beans, cooked quinoa, and sautéed veggies in the large bowl; mix well.
- Form the mixture into four patties about ½ inch thick.
- Grill or pan-fry the patties for about 5 minutes on each side until crispy.
- Toast whole wheat buns and assemble your burger with desired toppings.
