- 1 lb lean ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 medium onion, chopped
- 1 bell pepper, diced (any color)
- 2 tbsp chili powder (adjust to taste)
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add a splash of oil, then sauté chopped onions and bell peppers until soft.
- Push the veggies aside and add ground beef. Cook until browned, breaking it apart as you go.
- Stir in chili powder, cumin, garlic powder, salt, and pepper until combined.
- Add diced tomatoes with juices, kidney beans, and black beans. Mix well.
- Reduce heat to low and let simmer uncovered for at least 30 minutes for the flavors to meld.
- Taste and adjust seasoning if necessary before serving with your favorite toppings like cheese or sour cream.
