- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- ¾ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 large egg
- ¼ cup milk
- 1 tsp vanilla extract
- 2 cups powdered sugar (for filling)
- ½ cup unsalted butter (for filling)
- 4 oz cream cheese (optional for filling)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, beat softened butter and granulated sugar until fluffy. Add egg and vanilla; mix until smooth.
- Gradually add dry ingredients and milk to the wet mixture; mix until just combined.
- Scoop rounded mounds onto prepared sheets and bake for 10-12 minutes. Cool on wire racks.
- For the filling, beat powdered sugar and butter (and cream cheese if using) until fluffy.
- Assemble by spreading filling on one cookie half and sandwiching with another.
