  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 2 cups powdered sugar (for filling)
  • ½ cup unsalted butter (for filling)
  • 4 oz cream cheese (optional for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat softened butter and granulated sugar until fluffy. Add egg and vanilla; mix until smooth.
  4. Gradually add dry ingredients and milk to the wet mixture; mix until just combined.
  5. Scoop rounded mounds onto prepared sheets and bake for 10-12 minutes. Cool on wire racks.
  6. For the filling, beat powdered sugar and butter (and cream cheese if using) until fluffy.
  7. Assemble by spreading filling on one cookie half and sandwiching with another.
