- 1 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 cup granulated sugar
- 2 large eggs (room temperature)
- ½ cup whole milk (or almond milk)
- ½ cup unsalted butter (softened)
- 2 tsp pure vanilla extract
- 2 cups powdered sugar (for filling)
- Optional: 4 oz cream cheese (for filling)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together cocoa powder, flour, baking soda, and a pinch of salt.
- In another bowl, cream butter and sugar until fluffy. Add eggs one at a time followed by vanilla.
- Gradually mix in dry ingredients alternating with milk until just combined.
- Scoop batter onto prepared sheets, leaving space between each dollop.
- Bake for 10-12 minutes until edges are firm. Cool completely on wire racks.
- Fill with your favorite frosting or cream filling, sandwiching two halves together.
