Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Grate zucchini and squeeze out excess moisture.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat eggs, then mix in zucchini and vanilla extract.
- Combine dry ingredients into wet ingredients until just mixed; pour into the prepared pan.
- Bake for 25-30 minutes until golden brown and a toothpick inserted in the center comes out clean. Cool before slicing.
