  • 2 medium zucchinis (about 2 cups grated)
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ⅓ cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup chocolate chips or nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Grate zucchinis and squeeze out excess moisture.
  3. In a bowl, mix flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
  4. In another bowl, whisk eggs, oil, and vanilla. Fold in zucchini.
  5. Combine wet and dry mixtures gently; do not overmix. Add chocolate chips or nuts if desired.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 50-60 minutes until golden brown; check doneness with a toothpick.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
