Ingredients

  • 3 medium zucchinis (sliced lengthwise)
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil (chopped)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice zucchinis and sprinkle salt over them; let sit for 15 minutes.
  2. In a bowl, combine ricotta, beaten egg, basil, salt, and pepper until creamy.
  3. In a baking dish, spread a layer of marinara sauce. Alternate layers of zucchini, ricotta mixture, marinara sauce, mozzarella, and Parmesan cheese until all ingredients are used.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  5. Allow to rest for 10 minutes before slicing.
