- 3 medium zucchinis (sliced lengthwise)
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 large egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil (chopped)
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Slice zucchinis and sprinkle salt over them; let sit for 15 minutes.
- In a bowl, combine ricotta, beaten egg, basil, salt, and pepper until creamy.
- In a baking dish, spread a layer of marinara sauce. Alternate layers of zucchini, ricotta mixture, marinara sauce, mozzarella, and Parmesan cheese until all ingredients are used.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
- Allow to rest for 10 minutes before slicing.
