- 2 medium zucchinis (spiralized)
- 1 cup pesto sauce (homemade or store-bought)
- 1 cup cherry tomatoes (halved)
- ½ cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper (to taste)
Instructions
- Wash and spiralize the zucchinis into noodle-like strands.
- In a skillet, heat olive oil over medium heat until shimmering.
- Sauté the zucchini noodles for 3-4 minutes until slightly softened yet crunchy.
- Remove from heat and stir in pesto sauce until noodles are well coated.
- Fold in halved cherry tomatoes and allow them to warm through for about a minute.
- Top with freshly grated Parmesan cheese before serving.
