- 8 slices thick bread (Texas toast or brioche)
- 4 large eggs
- 1 cup whole milk (or almond/oat milk)
- 2 tsp ground cinnamon
- 1/2 cup granulated sugar (or mix with brown sugar)
- 3 tbsp unsalted butter (for frying)
Instructions
- In a small bowl, mix sugar and cinnamon; set aside.
- In another bowl, whisk eggs and milk together until smooth.
- Flatten each slice of bread with a rolling pin and sprinkle the cinnamon-sugar mix on one side. Roll tightly like a burrito.
- Heat butter in a non-stick skillet over medium heat until bubbly.
- Cook roll-ups seam-side down for 2-3 minutes per side until golden brown and crispy.
- Sprinkle with remaining cinnamon-sugar while warm and serve with maple syrup or fresh berries.
