- 24 Biscoff cookies, crushed
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs, room temperature
- ½ cup Biscoff spread
Instructions
- Preheat oven to 325°F (160°C).
- Combine crushed Biscoff cookies with melted butter and press into the bottom of a springform pan to form the crust.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla.
- Add eggs one at a time, mixing gently after each addition. Fold in Biscoff spread until just combined.
- Pour filling over the crust and bake for 50-60 minutes, until edges are set but center is slightly jiggly.
- Let cool completely before refrigerating for at least 4 hours or overnight.
