  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • ½ cup Biscoff spread

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine crushed Biscoff cookies with melted butter and press into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla.
  4. Add eggs one at a time, mixing gently after each addition. Fold in Biscoff spread until just combined.
  5. Pour filling over the crust and bake for 50-60 minutes, until edges are set but center is slightly jiggly.
  6. Let cool completely before refrigerating for at least 4 hours or overnight.
