Ingredients
Scale
- 4 thick-cut bone-in lamb chops
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup full-fat Greek yogurt
- 2 garlic cloves, minced
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- 1. Marinate the lamb chops: In a bowl, mix minced garlic, olive oil, salt, pepper, and lemon juice. Rub this mixture over the lamb chops and let marinate for at least one hour.
- 2. Prepare the mint yogurt sauce: Combine Greek yogurt with chopped mint leaves and additional lemon juice in another bowl. Season with salt to taste and set aside.
- 3. Grill the lamb: Preheat your grill to medium-high heat (about 400°F). Grill each side of the marinated lamb chops for 4-5 minutes until browned.
- 4. Check doneness: Use a meat thermometer to ensure internal temperature reaches 145°F for medium-rare.
- 5. Rest and serve: Allow the grilled lamb chops to rest for about 5 minutes before serving with the mint yogurt sauce.
