- 2 cups fresh blueberries
- 2 large lemons (juiced and zested)
- 1 cup heavy cream (cold)
- 3/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 tsp unflavored gelatin powder
Instructions
- Rinse and dry the blueberries gently to avoid sogginess.
- In a bowl, zest and juice the lemons. Mix with sugar and gelatin powder until well combined; set aside.
- In another bowl, whip the cold heavy cream using an electric mixer until soft peaks form (about 3-5 minutes).
- Carefully fold the lemon mixture into the whipped cream until fully incorporated.
- Gently add in the blueberries, then spoon into individual cups or one large dish. Refrigerate for at least 2 hours until set.
- Garnish with extra blueberries and lemon slices before serving.
